This is the recipe for the creamed rice and blueberry compote that we sell at Canteen.
Creamed Rice with Blueberry Compote
- 1/2 cup medium rice
- 1/2 cup water
- 1L full cream milk
- 1/4 cup sugar
- 1 tsp vanilla extract
Method
- In a saucepan on medium heat bring rice and water and sugar just to boil. Stir frequently to dissolve sugar.
- Slowly and gradually add milk, and simmer for 30-45 minutes.
- Stir occasionally to prevent rice catching on saucepan base.
- Add more milk if rice has thickened too much.
- Add vanilla extract and more sugar if needed.
Blueberry Compote
- 1 cup frozen blueberries
- Water
- 1 to ½ tablespoons sugar
- Dash of vanilla extract (optional)
Method
- In a small saucepan, add blueberries, water to cover the bottom of the saucepan and 1 tablespoon of sugar.
- Place on low to medium heat for 10-15 min to simmer, stir occasionally.
- Once the liquid starts to thicken, switch off. Add more sugar or vanilla to taste. After 5 minutes the compote will thicken.
